High-molecular-weight exopolysaccharide produced by Xanthomonas campestris fermentation. Exhibits pseudoplastic (shear-thinning) rheology — thick at rest, flows when applied. Forms synergistic hydrogen bonds with galactomannans for enhanced thickening.
